Five hours in our Geneva shop, a knife in your hand and a whole piece in front of you. A Maestro Cortador guides every participant, one gesture at a time. You leave knowing how to open a jamón — and how to keep it.

A private session, from 7 to 12 people

The masterclass is no longer sold seat by seat. It is booked by a group — a company, a team, a family, a club, a table of friends. You pick the date with us, we close the shop for you, and the session is yours.

Seven participants is the floor: below that the session does not run. Twelve is the ceiling: above that there is not enough room around the stands to carve safely. Between the two, the price is the same for everyone, CHF 295 per person.

How the day runs

Welcome, coffee in hand

Meeting the Maestro, and a first look at the world of jamón ibérico before anyone touches a blade.

The product first

Origins, farming, the four grades. The context that makes the rest make sense.

12h30

Hands on the knife

Each participant carves a real jamón ibérico under the direct supervision of the Maestro Cortador. Grip, posture and gesture corrected one by one.

15h00

Tasting

The jamón you have just carved yourself, with a glass of wine chosen to go with it.

15h45

Diploma

A certificate of initiation to traditional knife carving, handed to each participant.

The class is given mainly in Spanish, translated into French and English as the group needs.
